Greek Lentil soup ( Fakes)
There are a lot of recipes for this healthy soup. I use always the simple recipe of my grand mother using 2 ingredients to give all the taste and make so special this soup. Garlic and bay
leaf.
Lentils (fakes) are a wonderful source of protein .High in iron, vitamins, minerals, folate and magnesium, lentils can help reduce risk of heart disease, increase energy and reduce blood cholesterol.
I am starting with adding lentils into a deep pan along with some water and place over high heat. As soon as they come to the boil, drain them into a colander.
Place a pan over medium-low heat and add the lentils, 1 liter of water (warmed), the garlic and the bay leaves. I add also 1 cup of vegetable broth. Simmer with the lid on for about 25 minutes. Then I add 1 tablespoon of tomato paste. At the end I add pure olive oil.
Some people add 1 teaspoon red wine vinegar in their lentils for an extra flavour..
Tipp : attach your lentils with a glass of orange juice or a broccoli salad to absorb your body better iron containing.
